Vegan zucchini muffins with chocolate chips! They’re not the prettiest things, but they taste awesome! Here is the recipe!
Work was slowwwwwww today. But I came home and was super productive! Vacuumed and straightened up. Showered. Made those kebabs with enough for leftovers for tomorrow’s lunch to have with the leftover mashed potatoes from Monday.
Grilled the rest of the cauliflower and squash I leftover for the week. Used the rest of the zucchini to make muffins. Will post a picture of the muffins when they’re done cooking! I’m taking one to Lynn at the office since she does oil-free plant-based and these muffins fit her criteria! She and I always get left out of office goodies so yay!
Dinner! Tofu kebabs with zucchini, squash, and cauliflower. And sourdough. So gooooood.

Lunch! Roasted squash and cauliflower from the farmer’s market. Homemade whole wheat sourdough bread also from the farmer’s market. Lentils cooked with basil, oregano, s&p, and garlic & onion powders.

Good day at work. Gordon Ramsay is in my town filming Hotel Hell this week. Cody saw him walking around downtown and I AM SO JEALOUS. Anyway.
I just got back from running. I started the C25K program over again because I let too much time pass. There’s no way I could go back to where I was. I’m annoyed at myself for having to start over but whatever. I’m doing it.
I reallllllly didn’t want do it today due to various excuses I gave myself. Headache, not enough time, you just had a snack so it will feel bad, etc. Went anyway and killed it.
Going to see Man of Steel later with boyfriend. Farmer’s market in the morning and my parents/sister are coming to visit :)
